Empty the Refrigerator Pasta

Too many items in your refrigerator and none are enough, on their own, to make a meal? I often find myself in that position.. Recently, I pulled all the “I don’t know what to do with” items out of the refrigerator and set them on the counter. My inner Chopped Chef, determined to make something edible for dinner, put together a pasta dish. It turned out well and I succeeded in not wasting food.

I made a sauce out of pancetta, onions, garlic, carrots, green peppers, red pepper flakes, tomatoes and chicken stock. To that I added cooked pasta along with a bit of cream. Then, I stirred in chunks of mozzarella, cherry tomatoes, scallions, basil and pepper. Once off heat, parmesan cheese was sprinkled on top and mixed in.

Peas, spinach and/or mushrooms would have been a nice touch, but I didn’t have these items.

We had a loaf of left-over homemade french bread that served as an accompaniment.
