Recipe: Empanadas

An easy and yummy treat

Recently, I made meat-filled empanadas, using a Cuban recipe.  I was surprised at the ease of creating these very tasty handheld treats.

The ease and timing of preparing empanadas allows for oodles of time for last minute accompaniments. The filling, I made a picadillo (meat) filling, can be prepared a day or two before serving and the empanadas can be put together and baked a day before serving.

You do not need to be a bread baker to make the empanada dough.  It is quite easy and does not rely on that “touch” bread baking requires.

Add a good salad, some rice and you will have a fun, filling and food meal.
