Shawarma Spiced Chicken

I have been making this Epicurious recipe for years. It is quick, inexpensive, filling (but not too filling) and healthy

I wouldn’t label this Shawarma recipe 100% authentic, but I do label it excellent with the expected Lebanese flavors present and accounted for.

It is one of those dinners where we say “um, this is so good” after each bite!

The flavors are fully developed. Just the right amount of tang and full of textures. Poke around the plate and each bite can be a little different. Chicken, vegetables, yogurt, herbs and spices. What’s not to like?

The chicken thighs are seasoned in cumin, coriander, paprika, cayenne, cinnamon and olive oil and then baked in the oven. A salad is composed of romaine, tomatoes, cucumbers, red onion, dill and mint and other vegetables you desire. A yogurt sauce is made using lemon, tahini, garlic, dill and mint.

The dish is put together in layers.
