Quick, weeknight meal
We all tire of cooking and sometimes want to make an easy, quick meal that tastes like we put some time and thought into dinner. This recipe fits the requirements – you can have dinner on the table in 30 minutes.
Gather your ingredients and before you know it, dinner is on the table.
Boneless, skinless chicken breast
Kosher salt
Poultry seasoning
Paprika
Olive oil
Butter
Orzo
A variety of vegetables (onions, peppers, radish, spinach, tomatoes, broccoli, etc)
Italian salad dressing
Parmesan cheese
Throw a handful of kosher salt into a bowl of lukewarm water and mix until salt dissolves. Pound chicken to thin and even out. Add chicken and let marinate in the brine for 15 minutes.
Cut vegetables into small pieces and place in a salad bowl. Add Italian dressing.
Cook orzo according to package directions. When finished boiling, drain and add to the bowl with salad dressing. Stir. Add parmesan cheese to taste and stir again.
Place a frying pan on medium heat and add a splash of olive oil and a dollop of butter.
Remove chicken from brine and rinse. Dry with paper towels. Season both sides with kosher salt, pepper and seasoning of your choice (poultry seasoning and paprika are good choices.)
Increase pan heat to med-high. Add chicken and fry for a few minutes on each side. Add more butter if needed.
Serve.
Add whatever vegetables you prefer to the orzo. Use a different dressing, any oil and vinegar based dressing would be tasty. The chicken seasoning are, again, entirely up to you. Rosemary, thyme, oregano – it is up to you,
