When serving a Mexican-influenced meal, it is nice to add a light salsa that can be eaten in combination with the main dish or as a stand-alone accompaniment. I found this pineapple salsa to be the perfect extra for my Taco party. It presents the sweetness of pineapple, creaminess of avocado, crunch of jicama and heat of jalapeno. This is very easy to make and can be made ahead of time (but wait to add the avocado until serving time).
Pineapple Avocado Salsa
¼ pineapple, chopped into small pieces
fresh juice from 1 line
1 avocado cut into small pieces
½ jicama, cut into small dice
1-2 jalapeno, diced
Salt
¼ C cilantro, chopped
Mix all together and allow to sit for 15-30 minutes before serving. If making ahead of time, hold avocado until 15-30 minutes before serving.
