Mexican foods are so full of flavor, especially when the ingredients are fresh and varied. In our area of the world, so much of the available restaurant Mexican food is swimming in cheese, that flavors are concealed even if they exist.
Recently, for friends, I made a Mexican dinner that used fresh tomatillos, onions, garlic, stock and chipotle to form the sauce that chicken thighs and drumsticks braised in along with diced potatoes. It was lovely. Bursting in flavor and the heat was controlled by the amount of chipotle used.
The recipe I am sharing is a step by step guide starting with the mise en place and Ending with the finished product – making this a very easy recipe for anyone a bit timid in the kitchen.
