Weekly Recipe: TAHDIG

A few years ago, a friend mentioned a rice dish I had never heard of. Tahdig.  It is a Persian dish that seemingly makes the perfect side dish for every protein. Roasted, braised or stewed proteins are best because they offer flavorful gravies to add  to the rice.

Tahdig is casually called crusty rice or crispy rice.  It is basmati rice cooked to produce a light, fluffy rice with a very rice crust.  Saffron adds a dreamy flavor and dried fruit (cranberries, raisins, cherries) add sweetness when used.

Tagdig makes a beautiful, albeit unusual presentation to your table – often receiving oo’s and aw’s.

Relatively easy to make.  Just follow the directions which include rinsing the dry rice until very clean and using a non-stick pan.

There are, as always, many recipes but I share this one for its simplicity, excellent instructions and flavorful results.
